Oak must be used properly in order not to alter a wine’s flavour, structure and stability. What is understood about the precise influence and interplay between oak source, seasoning and crafting the casks? How should these and other variables such as oxygen be managed through the barrel? To what extent is all this a matter of art, dexterity or fashion and what can be learned from the latest research into this rapidly changing field?

Three technical speakers from Taransaud, as well as the Company’s owner Henri de Pracomtal will debate the use of oak barrels as a tool to reveal intrinsic quality and character in wines. The technical speakers include Vincent Renouf, Oenological R&D Director, PhD in Oenology. Through carefully structured tasting of samples and finished wines, the seminar will focus on country of origin of oak; oak seasoning duration; control of oxygen during wine ageing in oak barrels; influence of specially designed barrels on white wines; limited series T5 barrel.

Special vinifications of exceptional wines have been made for this seminar and we will welcome these distinguished guests to help present:
- Wines from Château Pichon-Baron (Pauillac) with Christian Seely, Managing Director, AXA Millésimes
- Wine samples from Château Moulin Saint-Georges (Saint-Emilion)
- Wine samples from Château Phélan-Ségur (Saint-Estèphe) with Fabrice Bacquey, Technical Director
- Wine samples from Domaine François Lumpp (Givry, Burgundy)

This seminar will aim to provide unique insights into how barrels can be a tool to reveal intrinsic quality and identity in wines. The seminar follows successful, similar events in London (2004 and 2012), New York (2005), Adelaide (2007) and Napa (2008). It will be chaired by Anthony Hanson MW.

*Please note that the morning session (Session 1) will be repeated in the afternoon (Session 2). There will be a welcome coffee/tea and then some food and beverages shared after each class.
